Chocolate Cake with Custard Filling

It's been a while since I updated this blog. I broke my promise about being serious about this. I guess my short attention span has done it again. Anyway, to make up for my negligence, I decided to share the chocolate cake recipe I used for our anniversary last October 24.

I used the Extreme Chocolate Cake recipe found at Allrecipes.com, my go-to site for cakes and pastries. I used that little widget you can find on their page and lowered the serving size to 8 because I only wanted to work with one layer.

I'm not really fond of cakes, so I thought that a plain chocolate cake would be really boring. I decided to fill it with custard because, who doesn't love custard? :D I was also being bothered by my sweet tooth that day, so I guess that's another reason why I decided on the custard filling.

Custard Filling:

1 can of condensed milk
4 egg yolks
1/4 cup of pineapple juice

Combine the milk and the yolks in a saucepan over low heat. Keep stirring until the mixture thickens.   Before spreading the filling on the cake, make sure to let it cool.

The icing was all right. Next time, I'm going to use a thicker and richer one. My family had no complaints about it though, so I think I'm just being picky. Someone did say that it was a bit too sweet, so maybe you can check on that if and when you decide to try this recipe out.

3 =3 years together.
I didn't have anything on hand that I could use to top the cake, so I opted to just use the extra filling. Not too bad, right? My brother kept on raving about this cake so I think there's something special about it. He particularly liked the idea of using custard as the filling.
